After being diagnosed with IC (interstitial cystitis), finding something to eat that I enjoy is becoming quite an ordeal. Everyone says, “just adjust your recipes”, but that can be easier said than done. Hence, I shall post recipes that are IC friendly, that have been adapted or have been found online to share with others. I hope you like the recipes as much as I do. :)

Potato Soup
An old family recipe that was adapted to be IC friendly. From nikicooks.blogspot.com.
Potato Soup
Ingredients:
1 32 oz bag southern style frozen hash browns
3 cups chicken broth (without problem ingredients)
1/3 chopped medium onion (if tolerated)
1/2 cup chopped celery
1/2 cup chopped carrots
1/4 teaspoon pepper
2 teaspoon salt
1 to 2 Cream Soup Substitute (2 for soupier)
Any friendly cheese for garnish (if desired)
Directions:
In a large pot combine all ingredients. Bring to a simmer and then cook about 30-45 minutes, until vegetables are tender. Garnish with IC friendly cheese if desired.
