After being diagnosed with IC (interstitial cystitis), finding something to eat that I enjoy is becoming quite an ordeal. Everyone says, “just adjust your recipes”, but that can be easier said than done. Hence, I shall post recipes that are IC friendly, that have been adapted or have been found online to share with others. I hope you like the recipes as much as I do. :)

Cinnamon Maple Caramel Popcorn
This healthier, dairy-free, homemade version is really easy to make. Made simply with pure maple syrup, nut butter, spices and freshly popped popcorn. And it is delicious!
Feel free to change up your caramel popcorn! Add toasted, sliced almonds to match the almond butter, but you could leave out extra nuts or substitute your favorite. Feel free to use any nut butter you'd like. Once you’ve mixed the maple syrup mixture into the popcorn, you could add in some toasted coconut, sprinkles… anything that sounds good.
