After being diagnosed with IC (interstitial cystitis), finding something to eat that I enjoy is becoming quite an ordeal. Everyone says, “just adjust your recipes”, but that can be easier said than done. Hence, I shall post recipes that are IC friendly, that have been adapted or have been found online to share with others. I hope you like the recipes as much as I do. :)

Garlic Butter Steak Bites with Creamy Alfredo Tortellini Delight!

Garlic Butter Steak Bites with Creamy Alfredo Tortellini Delight!
1 serving
Ingredients:
1 lb steak, cut into bite-sized pieces
4 tablespoons butter
4 cloves garlic, minced
Salt and pepper to taste (if tolerated)
8 oz tortellini (without problem ingredients)
1 cup heavy cream
1 cup grated Parmesan cheese (if tolerated)
Fresh parsley, chopped (for garnish)
Directions:
1. In a large skillet, melt 2 tablespoons of butter over medium-high heat.
2. Add the steak bites, season with salt and pepper, and cook until browned, about 3-4 minutes.
3. Add minced garlic and cook for an additional minute until fragrant.
4. Remove the steak from the skillet and set aside.
5. In the same skillet, add the remaining butter and heavy cream, stirring to combine.
6. Bring to a simmer, then add the Parmesan cheese, stirring until melted and smooth.
7. Cook the tortellini according to package instructions, then drain and add to the sauce.
8. Add the steak back to the skillet, tossing everything together to coat.
9. Garnish with fresh parsley before serving.
Notes
• Feel free to substitute the steak with chicken or shrimp.
• This dish pairs well with a side salad or steamed vegetables.
