After being diagnosed with IC (interstitial cystitis), finding something to eat that I enjoy is becoming quite an ordeal. Everyone says, “just adjust your recipes”, but that can be easier said than done. Hence, I shall post recipes that are IC friendly, that have been adapted or have been found online to share with others. I hope you like the recipes as much as I do. :)

FAQ
Can I use a different type of cheese?
Absolutely! While this dish shines with cream cheese, feel free to experiment. Cheeses like mozzarella or cheddar can add their unique flair. Mix in a bit of goat cheese for tang or ricotta for creaminess—there are so many options! If you want to keep it light and delightful, cottage cheese can also be a fun alternative.
How can I make this dish ahead of time?
Planning is key! You can prep your irresistible baked cream cheese chicken a day in advance. Simply:
• Marinate the chicken with your spices and cream cheese mixture.
• Cover tightly and refrigerate.
• On baking day, just pop it in the oven! This makes it especially handy for weeknight dinners or gatherings.
