After being diagnosed with IC (interstitial cystitis), finding something to eat that I enjoy is becoming quite an ordeal. Everyone says, “just adjust your recipes”, but that can be easier said than done. Hence, I shall post recipes that are IC friendly, that have been adapted or have been found online to share with others. I hope you like the recipes as much as I do. :)

Aunt Lou’s Fresh Apple Cake

Aunt Lou’s Fresh Apple Cake
Ingredients:
2 cups sugar
1 cup canola oil
3 large eggs, room temperature
2 teaspoons vanilla extract
3 cups all-purpose flour
1 teaspoon salt
1 teaspoon baking powder
3 cups chopped peeled Gala or Fuji apples (about 3 medium)
Confectioners' sugar
Directions:
1. Preheat oven to 350°. Grease and flour a 10-in. fluted tube pan.
2. In a large bowl, beat sugar, oil, eggs and vanilla until well blended. In another bowl, whisk flour, salt and baking powder; gradually beat into oil mixture. Stir in apples. Transfer batter to prepared pan.
3. Bake until a toothpick inserted in center comes out clean, 50-60 minutes. Cool in pan 10 minutes. Run a knife around sides and center tube of pan. Remove cake to a wire rack to cool completely. Dust with confectioners' sugar.
TIPS
Add 1 t. cinnamon (if tolerated) and 1/4 c. brown sugar to the apples before stirring them in. Substituted 1 t. baking soda for the baking powder. With these changes this is a moist cake with a bit of a crisp 'crust.' Each slice is packed full of apples. Ice it nor dust it with powdered sugar and it is delicious.
