Creamy Chicken Breast in Spinach Parmesan Sauce

Creamy Chicken Breast in Spinach Parmesan Sauce

Yield: 3 servings


Ingredients:

2 chicken breasts (This recipe says 2 chicken breasts for 3 servings and the picture provided has 3 chicken breasts in it so you decide how much chicken you will need.)
3 tablespoons butter, divided
1/2 teaspoon salt and pepper, or to taste (if tolerated)
1 teaspoon oregano
1 medium onion, minced (if tolerated)
4 cloves garlic, minced
1 small jar roasted red bell pepper, (without problem ingredients) drained and chopped or make your own
1/2 cup chicken broth (without problem ingredients)
1/2 cup heavy cream
1/3 cup grated Parmesan cheese (if tolerated)
1 cup spinach (or more if you like)


Directions:

1. Thoroughly season chicken breasts with salt, pepper, and 1/2 teaspoon oregano on both sides.

2. In a large skillet, melt 2 tablespoons of butter over medium-high heat. Add chicken breasts and cook for about 4 minutes on each side until browned. Once done and no longer pink, transfer grilled chicken breasts to a plate and set aside.

3. To make the creamy spinach parmesan sauce, add the remaining tablespoon of butter to the same pan. Cook onion, garlic, 1/2 teaspoon oregano, and roasted bell pepper. Slowly add chicken broth, heavy cream, and Parmesan cheese and mix to combine until smooth while simmering for 2-3 minutes. Adjust seasoning with salt and pepper.

4. Add spinach to the mixture and continue cooking until wilted.

5. Add the chicken breasts back to the pan and reheat for 2-3 minutes.

6. Serve the creamy chicken breasts with spinach and parmesan sauce immediately, garnished with fresh chopped parsley. Enjoy! ❤️



TIPS

If you have large chicken breasts, pound them or slice them horizontally to even out the thickness. This will cook the chicken faster.

You can substitute crispy bacon (without problem ingredients) for roasted red bell pepper for a nice flavor.

For a variant of this creamy chicken breasts recipe, you can use chicken tenders instead of chicken breasts. They’re delicious and cook faster! Just keep an eye on them so they don’t overcook.

Blueberry Jam

Blueberry Jam


Ingredients:

2 cups fresh blueberries
1/4 cup sugar
3 tbsp water
1 overflowing spoonful of cornstarch


Directions:

1. In a blender, pulse the blueberries, water and sugar.

2. Add to a small sauce pan with the cornstarch and heat on medium-low for about 10-12 minutes until it becomes thick and sticks to the spoon. Taste and add more sugar if you like it sweeter.

3. Cool and store in the refrigerator.

Aunt Lou’s Fresh Apple Cake

Aunt Lou’s Fresh Apple Cake


Ingredients:

2 cups sugar
1 cup canola oil
3 large eggs, room temperature
2 teaspoons vanilla extract
3 cups all-purpose flour
1 teaspoon salt
1 teaspoon baking powder
3 cups chopped peeled Gala or Fuji apples (about 3 medium)
Confectioners' sugar


Directions:

1. Preheat oven to 350°. Grease and flour a 10-in. fluted tube pan.

2. In a large bowl, beat sugar, oil, eggs and vanilla until well blended. In another bowl, whisk flour, salt and baking powder; gradually beat into oil mixture. Stir in apples. Transfer batter to prepared pan.

3. Bake until a toothpick inserted in center comes out clean, 50-60 minutes. Cool in pan 10 minutes. Run a knife around sides and center tube of pan. Remove cake to a wire rack to cool completely. Dust with confectioners' sugar.


TIPS

Add 1 t. cinnamon (if tolerated) and 1/4 c. brown sugar to the apples before stirring them in. Substituted 1 t. baking soda for the baking powder. With these changes this is a moist cake with a bit of a crisp 'crust.' Each slice is packed full of apples. Ice it nor dust it with powdered sugar and it is delicious.
