After being diagnosed with IC (interstitial cystitis), finding something to eat that I enjoy is becoming quite an ordeal. Everyone says, “just adjust your recipes”, but that can be easier said than done. 5-Star Cottage Cheese and Spinach Crustless Quiche: Light & Fluffy Delight
Ingredients:
1 cup cottage cheese
1 cup fresh spinach (you can use frozen but make sure to thaw the spinach and squeeze out the excess moisture before adding it to the mixture)
3 large eggs
1/2 cup milk
1/2 teaspoon salt
1/4 teaspoon black pepper (if tolerated)
1/2 teaspoon garlic powder
1/2 cup shredded cheese (whatever you can tolerate)
Directions:
1. Preheat the oven to 375°F (190°C).
2. In a mixing bowl, combine cottage cheese, spinach, eggs, and milk.
3. Add salt, pepper, and garlic powder, and mix until well blended.
4. Fold in the shredded cheese.
5. Pour the mixture into a greased baking dish.
6. Bake for 30-35 minutes or until the quiche is set and lightly golden on top.
7. Allow to cool for a few minutes before slicing and serving.
