Southern Fried Okra

Southern Fried Okra


Ingredients:

1-1/2 cups sliced fresh or frozen okra, thawed
3 tablespoons buttermilk (on the “Try It” list)
2 tablespoons all-purpose flour
2 tablespoons cornmeal (without problem ingredients)
1/4 teaspoon salt
1/4 teaspoon garlic herb seasoning blend (without problem ingredients)
1/8 teaspoon pepper (if tolerated)
Oil for deep-fat frying
Additional salt and pepper, optional (if tolerated)


Directions:

1. Pat okra dry with paper towels. Place buttermilk in a shallow bowl. In another shallow bowl, combine the flour, cornmeal, salt, seasoning blend and pepper. Dip okra in buttermilk, then roll in cornmeal mixture.

2. In an electric skillet or deep-fat fryer, heat 1 in. of oil to 375°. Fry okra, a few pieces at a time, for 1-1/2 to 2-1/2 minutes on each side or until golden brown. Drain on paper towels. Season with additional salt and pepper if desired.

Bacon Breakfast Pizza

Bacon Breakfast Pizza


Ingredients:

8 bacon slices, cut into 1 1/2 inch pieces (if tolerated)
1 1/2 tablespoons cornmeal
1 (13.8-ounce can) refrigerated classic pizza crust (without problem ingredients)
1 1/2 tablespoons olive oil
2 cloves garlic, minced
1 (8-ounce) package Mozzarella Cheese, thinly sliced
3 green onions, thinly sliced (if tolerated)
3 large eggs
Kosher salt and freshly ground black pepper (if tolerated)
2 tablespoons chopped fresh parsley leaves (garnish)


Directions:

1. Preheat oven to 450 degrees F. Lightly coat a baking sheet or pizza pan with olive oil.

2. Heat a large skillet over medium high heat. Add bacon and cook until just golden but not yet crispy, about 3-4 minutes. Drain excess fat; transfer bacon to a paper towel-lined plate.

3. Working on a surface that has been sprinkled with cornmeal, roll out the pizza into a 12-inch-diameter round. Transfer to prepared baking sheet or pizza pan.

4. Brush dough with olive oil and garlic. Top with mozzarella, bacon and green onions, leaving 3 (3-inch rounds) for the eggs.

5. Place into oven and bake until the edges begin to brown, about 10-12 minutes.

6. Remove from oven. Add eggs, gently cracking the eggs throughout and keeping the yolk intact.

7. Place into oven and bake until the egg whites have set and crust is golden brown, an additional 8-10 minutes.

8. Serve immediately, garnished with parsley, if desired.

Moist Lazy Daisy Cake


Ingredients:

2 eggs
1 cup sugar
1 teaspoon vanilla extract
1 cup cake flour
1 teaspoon baking powder
1/4 teaspoon salt
1/2 cup milk
2 tablespoons butter

FROSTING:
3/4 cup packed brown sugar
1/2 cup butter, melted
2 tablespoons half-and-half cream
1 cup sweetened shredded coconut (without problem ingredients)


Directions:

In a large bowl, beat eggs, sugar and vanilla on high until thick and lemon-colored, about 4 minutes. Combine flour, baking powder and salt; add to egg mixture. Beat on low just until combined. Heat milk and butter in a small saucepan until butter melts. Add to batter; beat thoroughly (the batter will be thin). Pour into a greased 9-in. square baking pan. Bake at 350° for 20-25 minutes or until cake tests done. Cool slightly. For frosting, blend all ingredients well; spread over warm cake. Broil about 4 in. from the heat for 3-4 minutes or until the top is lightly browned.
